The November Release Highland Park 21 Year Old has been matured in a combination of nine first-fill European oak sherry casks, eight bourbon hogsheads, and nine refill hogsheads. Master Distiller, Gordon Motion, considers 21 years an ideal period for maturation, establishing the right balance of fruit and oak for HP. Official notes say to expect freshly cut pineapple, ripe mango and light golden syrup, giving way to pear and vanilla flavours with a subtle touch of peat smoke on the finish. 46% Alc./Vol.
